鮮、香、味獨(dú)特的“老八餃子”是由明朝永樂十四年間唐山市許鄄子村許順金所創(chuàng),許順金為許鄄子村始遷祖許彥良的三世孫,因?yàn)樵诒娦值苤行邪?,人稱“許老八”,又因其善廚藝之“白案”,尤善餃子制作,他制作的餃子被俗稱為“老八餃子”。至今已有600多年歷史。
“老八餃子”興盛于明,鼎盛于清,許氏生意日益興隆,民國(guó)十九年許氏后人入股名噪一時(shí)的“久美齋”飯店后,其白案首推“老八餃子”和“棋子燒餅”,名店名吃轟動(dòng)永平、舜天兩府聲名遠(yuǎn)揚(yáng),生意興隆。但隨著抗日戰(zhàn)爭(zhēng)的發(fā)生,唐山百業(yè)蕭條、民不聊生、餐飲業(yè)一蹶不振,“老八餃子”“九美齋”也凋零衰敗。
1996年,許氏第21代傳人許志軍憑借配方獨(dú)特,皮薄餡大、香而不膩的特點(diǎn)“老八”老八水餃迅速成為廣大消費(fèi)者的。1997年注冊(cè)商標(biāo)“九美齋”開始“老八餃子”“九美齋”品牌的復(fù)興之路。使歷史悠久,鮮香美味的“老八餃子”走上全國(guó)的餐桌。
The "Old Eight Dumplings", known for their freshness, aroma, and unique flavor, were created by Xu Shunjin from Xu Qianzai Village in Tangshan during the 14th year of the Yongle reign in the Ming Dynasty. Xu Shunjin was the great-grandson of Xu Yanliang, the founding ancestor of Xu Qianzai Village. As he was the eighth among his brothers, he was called "Xu Old Eight". His culinary skills, particularly in making dumplings, earned him a reputation. The dumplings he made became widely known as "Old Eight Dumplings". They have a history of over 600 years."Old Eight Dumplings" thrived in the Ming Dynasty and reached their peak in the Qing Dynasty. The Xu family business prospered increasingly. In the 19th year of the Republic of China, descendants of the Xu family invested in the famous "Jiumeizhai" restaurant, where the best-selling dishes were "Old Eight Dumplings" and "Chessboard Pancakes". The renowned establishment and its famous dishes caused a sensation in Yongping and Shuntian, leading to flourishing business. However, with the outbreak of the Second Sino-Japanese War, industries in Tangshan went into decline, and the food industry was severely impacted, causing both "Old Eight Dumplings" and "Jiumeizhai" to wither.In 1996, Xu Zhijun, the 21st descendant of the Xu family, leveraged the unique recipe, known for its thin skin and generous filling, which is fragrant yet not greasy, allowing "Old Eight Dumplings" to rapidly gain popularity among consumers. In 1997, the trademark "Jiumeizhai" was registered, marking the revival of the "Old Eight Dumplings" and "Jiumeizhai" brand. This brought the historically rich and delicious "Old Eight Dumplings" to tables across the nation.
